Menopause recipe: Miso Salmon Bake

Serves 4 • Preparation: 15 minutes • Cooking: 30 minutes

500g | 17.6oz sweet potatoes, thinly sliced
2 cloves of garlic, minced
2 bulbs of fennel, thinly sliced
2 tablespoons white miso paste
4 lightly smoked salmon fillets
1 red onion, diced
4 tablespoons tamari
1 lemon
200g | 7.1 oz cherry tomatoes
100g | 3.5 oz kale

1. Preheat the oven to 180C Fan/Gas 6/360F. Arrange the sweet potatoes, minced garlic, and sliced fennel at the bottom of an ovenproof dish. Combine the miso paste with 500ml | 17fl oz of boiling water and pour it over the vegetables.

2. Place the salmon fillets on top, sprinkle with diced onion, and drizzle with tamari. Bake for 25 minutes.

3. Cut two lemon slices, halve each, and arrange them on the salmon. Squeeze the remaining lemon juice over the dish. Add cherry tomatoes and sprinkle with kale. Return to the oven for 5 more minutes.
